Recently, I spent a long weekend on the beach reconnecting with five friends from high school. We all wanted to spend quality time together, catching some rays, gossiping (all good stuff of course) and taking some time away from our daily grind as mothers, wives, and hard driving professionals.
So, we rented a house, headed into town, and went out to the local farmer’s market for fresh groceries (and a bit of wine for our late-night beach walk-and-talks). The farmer’s market had cartons of organic blueberries on sale, so I bought a ton to make us all breakfast smoothies.
Blueberry Flaxseed Superfood Smoothie
Each morning, I would offer to make my girlfriends this blueberry flaxseed superfood smoothie. After, all of them raved and said it was like having dessert for breakfast, and could not believe it was dairy free and contained no added sugars nor sweeteners!
Additionally, I had planned to only add organic chia seeds I had brought with me from home, but the farmer’s market was selling ground flaxseed in bulk. So flax and chia it became! I absolutely love adding these types of high fiber seeds and omega-3 fats to my smoothies. Plus, they create a layer of texture and thickness to the smoothie without being gritty.

- 1 cup coconut yogurt (dairy-free, unsweetened)
- 1 cup water
- 1 cup blueberries (fresh or frozen, organic preferred)
- 1 cup cucumber (fresh, peeled)
- 1 cup celery
- 1 tablespoon camu powder
- 2 tablespoons flaxseed (ground)
- 1 tablespoon chia seeds
